On a conspiratorial note: interesting that DiDio calls out the changes "since Infinite Crisis." Hmmm, no mention of Final Crisis, eh? Should we infer that means there are no continuity changes coming as a result of FC?
The big question is where Geoff Johns and Gary Frank are going. They will be doing Superman: Secret Origin as a miniseries coming up later in the year...They’ll be doing the definitive origin of Superman as we’ve seen it all take place, and incorporating the changes that we’ve seen or suggested since Infinite Crisis.Because the world hasn't had enough origin and early life of Superman stories yet...especially "secret" ones.

Hate to burst your conspiratorial bubble, but: "Infinite Crisis" finished in 2006, "Final Crisis" started in 2008, so obviously any changes instituted by "Final Crisis" are also changes "seen or suggested since Infinite Crisis".
I have no particular bubble to burst, just curiosity.
And while your parsing makes sense on a grammatical level, it does seem odd for DiDio talk about all the "changes" and not at least name check the current "this is the culmination of everything we've been doing for the past five years" massive crossover series, doesn't it, particularly if you're enthusiastic about the latest series?
That would be rather like referring to "every change the President has made since the beginning of the George W. Bush administration" and then saying "of course grammatically that implies Obama, too."
Well, in the latter example you'd be on rather shaky ground, especially as of this writing. Obama has not been inaugurated yet, so even assuming "the President" is referring to the office, not the office-holder(s), you'd be talking about events in the future, and don't think anyone claimed that DiDio was referring to changes "we've seen or suggested" in comics that will only be published after "Superman: Secret Origin". While somebody saying in 2008: "every change we've seen George W. Bush make since the beginning of his first term of office" clearly also includes changes instituted during the second term even if that is not referred to specifically. (To use a different example, if you speak of "the changes we've seen occur in US society since World War 2" does not mean that the speaker is implying that e.g. the Vietnam War or the end of the Cold War did not have an effect on US society).
Treating it as a grammar question, also note that DiDio's "since Infinite Crisis" is ambiguous. It could mean "since the beginning of Infinite Crisis", but "since the end of Infinite Crisis" would also be a grammatically correct interpretation. However, "between the beginning and the end of Infinite Crisis, but not later than that" would be incorrect.
Not treating this as a grammar question, I'd say that all that can be inferred from DiDio's statement is that the changes instituted by "Final Crisis", as important or unimportant as one may consider them, will not completely wipe out every single change that was instituted between the beginning of "Infinite Crisis" and the beginning of "Final Crisis".
I saw the covers to this new origin series for Superman and I'm quite happy. The Legion will, once again, be part of the younger Superman (or is it Superboy?). They will be bringing a lot of stuff back into place and I'm happy about it.
Final Crisis could be the end of my reading habits, but thankfully there's some good stuff to look for in the horizon.
